ya, i don't use cumin in my masala eggs. sometimes i use garam masala but not always. my mom usually puts in cilantro and ginger too which is yummy. if i'm doing it scrambled i usually roast up the onions before w/ oil and red chili powder and make it bhujjia. yum.

yeah, i'm making them for my book club meeting! might try a variation to keep things interesting :)
Mine is more like vegetable omelette. I add chopped boiled spinach, onion, tomato, green hot pepper, cilantro, sometimes mushroom. I have not tried ginger but it sounds good. I am not sure about curry powder because that should be cooked well. Garam masala, black pepper and salt should be great. Shiwani let me know how your omlettes turn out.
I only use the curry powder if I'm putting it in with the onions first...otherwise, it doesn't cook well, you're right.
