    If you want the wine really dry then yes but if you want a little residual sugar in the wine then no. Hit with about 40 ppm SO2 = 40 * say 19L = 760 mg = 0.76 grams. = a little over 1/8 tsp of potassium metabisulfite..

    THere not big enough Jim you need carboys large enough to hold 23litres. I believe the water containers are only 19litres. This is the size of the old carboys. The new kits all make 23litres. Carefull with plastic ones anyway if you get them scratched ...
