We have been taught that pasteurization is a good thing, a method of protecting ourselves against infectious diseases, but closer examination reveals that its merits have been highly exaggerated. The modern milking machine and stainless steel tank, along with efficient packaging and distribution, make pasteurization totally unnecessary for the purposes of sanitation.

Well, that's a bit tricky to answer because there's an incredible amount of variation in the product.
Ideally, it's cow's milk taken straight from animals fed only fresh, organic, green grass, rapidly cooled to somewhere around 36-38 degrees F., and bottled. That's it. No processing, just filtration, and cooling. Most milk produced today undergoes some form of processing before it reaches the consumer.
