Step 1 - Cut bell peppers
Cut bell peppers in half lengthwise; discard seeds and membranes.Step 2 - Place peppers on baking sheet
Place pepper halves, skin sides up, on a foil-lined baking sheet; flatten with hand.Step 3 - Broil Bell Peppers
Broil 3 inches from heat for 10 to 12 minutes or until blackened. Place in zip-top plastic bag; seal and let stand for 15 minutes. (This will loosen the skins and make peeling them much easier.)Step 4 - Peel Peppers
Peel and discard skins. Store roasted peppers in an airtight container in the refrigerator.

It is easy to prepare and simmers in a slow cooker all day, ready to enjoy when you arrive home. I serve it over rice (laced with lime juice and fresh cilantro), Cheddar cheese, salsa, guacamole, and a dollop of sour cream. Amazing!
