Microsoft is an ocean going supertanker, it can't just add features to and OS release. Sadly, for the last 2 years, they've been removing features from Vista to have a hope of shipping it this year. Supporting the 3% of the population that will have an Intel Mac by the end of the year is at the bottom of the list of things to do.
Since Longhorn releases have been available for 2 years to developers, a better question might be - Why didn't Apple make sure Longhorn (Vista) worked on the new hardware they were developing?
